2 lbs. ground beef
Swiss cheese
Provolone cheese
Chives
Garlic
1/2 mayonnaise
Salt
Pepper
Brioche buns
A good grilled burger is one of the true American classics but were gonna switch it up a little bit today and use a flat bottom cast iron pan over some coals to cook up so juicy and delicious burgers. First things first, were making our own patties, none of the store bought ones here. Take your 2 pounds of ground beef and add it to a bowl. Add salt and pepper for taste and then what really makes these good is were gonna add a couple shredded slices of provolone and Swiss to the bowl and then mix it all together for a pretty even mix throughout. Form about 8 quarter pound patties from the mix (or 4 half pounders if you’re feeling adventurous) and set them to the side. Now were gonna make the burger sauce that really sets this recipe apart from the others. Take fresh chives and slice them extremely thin, then take about 3 cloves of garlic and work it into a paste. The flat side of a knife can make this easier. Add the garlic and chives to a half cup of mayonnaise and add salt and pepper to taste and mix until blended. Now place your burgers in a ripping hot cast iron pan above coals that are dying down. We don’t want to burn the outsides of the burgers but we want to hear that sizzle when you place them in. A good rule of thumb for burgers around medium heat is 5 minutes flip, 5 minutes flip, 3 minutes flip, 2 minutes done. For adding cheese do so in the last minute of cooking and poor a little water into the pan and then cover with a lid. The steam will help fully melt the cheese. Remove your burgers and allow to rest for a few minutes and while you’re waiting toast your brioche buns on the pan to help crisp them up. Then add your sauce to either side of the bun slap a burger on there and enjoy!
