Ingredients
4 eggs
1/2 lbs. bacon
Sour cream
Tortillas
Fresh salsa
Homemade guacamole
Sausage
Shredded cheddar
Nothing quite beats a quick breakfast burrito made over some hot coals on the side of a trail while watching the sunrise. So pull up a chair and grab a cup of coffee and lets get cooking. Make sure you let the fire dies down a little and make a nice bed of coals to place your griddle on a few rocks to elevate it above the flames. Place your cast iron pan over the fire and let it heat up. Add a little water and let your sausage simmer till cooked. I tend to slice my bacon into bits for ease of cooking and render off a little honey bourbon with it while it cooks and then use the grease to help the eggs not to stick. How you cook the eggs is mainly personal preference as I know some people like a runny yolk and others can’t stand it, however I usually go with scrambled eggs to make things easier. Toast your tortillas over the coals briefly to warm and then apply your sour cream guacamole and salsa to the bottom. Slice the bottom of the sausage flat to help it lay better and add eggs and cheese on top. Roll the burrito and place back in the pan for a few minutes to brown the tortilla and help really melt the cheese and add your sauce of choice and dig in!
